The use of allspice to smoke meats goes back long before
Columbus visited the New World. In the 1600's, pirates would stop in the
Caribbean to stock up on the allspice-smoked meats, adding their own spices
brought from the East. In Jamaica these spices were combined with the South
American Indian process of slow-cooking whole, wild pigs to produce Jerk
Pork, one of the world's greatest dishes. Our Jerk Pork Seasoning captures
that rich flavor combination, a bit like a barbecue seasoning and Chinese
Five Spice mixed together. Great for whole roast pig, but equally good for
pork chops or tenderloin on the grill. Hand-mixed from: paprika, allspice,
ginger, red pepper, sugar, ground Grenadian nutmeg, black pepper, garlic,
thyme, lemon grass, cinnamon, star anise, cloves and mace. |
