These noodles are one of Anne’s go-to recipes when she or her husband Pat need something quick, delicious and comforting.

“One reason I love to cook and bake is that by its very nature, it’s temporary,” says Anne Chang of Mahwah, New Jersey. “So I can do it over and over again without worrying about where to store the end results!

“Most importantly, it connects me to people. My husband Pat is a college administrator and, as part of his responsibilities, we live on a college campus, surrounded by students. Without having planned it, my cooking and baking has become part of our campus life. Many a time we’ve had a student knock on our door with some sort of question and he or she ends up staying for dinner—sometime they need more than a meal, but a home-cooked meal is a great start.

“Cottage Cheese Cinnamon Noodles is a really quick, easy, and inexpensive dish that fits the bill for breakfast, lunch, dinner, a midnight snack, you name it! It may sound a bit odd, but you’ll be surprised at how good this is. It is all about opposites. The cool, creamy saltiness of the cottage cheese works with the sweetness of the cinnamon sugar, set against the hot, buttered egg-y noodles.”


Cottage Cheese Cinnamon Noodles

Anne says, “Here’s a really quick, easy, and inexpensive dish that fits the bill for breakfast, lunch, dinner, a midnight snack, you name it!”


  • 2 Cups cooked egg noodles (about 1 Cup uncooked)
  • 2 TB. butter
  • 1/2 Cup small curd low-fat cottage cheese
  • 1-2 tsp. CINNAMON SUGAR

Boil the egg noodles according to package directions. Drain well. Toss the noodles with the butter. Top with the cottage cheese—either mound it atop the noodles or mix it in. Sprinkle with the CINNAMON SUGAR and enjoy.

Cooking time: 10 minutes or so for the noodles
