“Staying healthy is important to me,” says Emily Guertin of Cambridge, Massachusetts. “That includes both eating well and exercising. I love being outdoors and challenging myself. Running, biking and skiing keep me feeling energized and strong enough for my day-to-day tasks.
“My mom always cooked well-balanced meals,” recalls Emily, who is studying to be a dietitian. “They included a starch, vegetable and protein. I now advise others to do the very thing she did for us!
“Our family is really blessed with the care and effort my dad puts into putting good food on our table. He was (and still is) an avid gardener. While I wasn’t a big vegetable eater as a kid, today the goodies that come in my weekly farm share invoke memories of a countertop full of the same items from my dad’s garden and the dishes that my mom made from them. When you have fresh, good-quality ingredients, the cooking is simple.
“I live with three wonderful roommates,” adds Emily. “We are very much like family and we all love to cook. Nothing brings me more enjoyment and satisfaction than being able to provide someone a delicious and nourishing meal. Strawberry ’Nilla Smoothie is one of my favorite breakfast recipes.”
Emily describes this as, “Like a marshmallow, light and fluffy.”
Add all ingredients to a blender and whirl on high until completely blended. Divide between two large glasses. Don’t forget to remove the stems from the berries and peel the banana before freezing it, as it’s nearly impossible to get the peel off a frozen banana, or dig out the stem on frozen berries, as we learned the hard way!
