Joy Henkle of Corvallis, Oregon, comes from a long line of good cooks. “But it was a little book of easy-to-follow recipes that my grandmother had given to my mother that really started my love affair with cooking,” Joy admits.
“My husband Bob appreciates my cooking abilities. Smart man that he is, he continually praises me, which is probably the fuel that keeps me interested in preparing yummy, nutritious dishes. He is my chief washer and bottle cleaner, too.
“We invite friends and family almost weekly to our home,” Joy adds. “I love to try new recipes. It is just the best feeling to have those I cook for tell me they love to eat at our house because it is comfortable and homey and our food is always served with thought and care. I love watching their reactions to the dishes I prepare.”
She adds, “I like to plan my menu around dishes that can be made ahead so I am not stressed as our guests arrive and so I can talk with them before dinner starts.”
Orzo pasta makes for a nice change in this pretty pasta salad from Joy.
Cook the pasta in boiling water until al dente (4-6 minutes), drain and let cool. Add the peas, feta cheese, parsley and cashews. In a separate bowl, whisk together the vinegar, olive oil and BUTTERMILK RANCH DRESSING and pour over the pasta mixture...excellent.Prep. time: 10 minutes
