
Linda's grandchildren, Jenna (10) and Ryan (7), know there's always something good to eat in Grandma's kitchen.
“I like to keep family traditions going,” says Linda Aukerman of Findlay, Ohio. “Holidays are spent making my Croatian grandmother’s Kolatchi—a sweet, rich dough spread with melted butter, brown sugar, cinnamon and walnuts. My mom, a cousin, my daughter (and grandkids) gather in my kitchen to help bake.
“We also visit a nearby tree farm with our grandchildren. Families ride on a wagon pulled by big draft horses to look for their special tree. It’s such fun! And there’s a live Nativity scene for the kids with real baby animals.”
A new tradition shows up often on Linda’s dinner table these days. She explains, “This recipe came about one night when I wasn’t sure what to do with the chicken I had. Penzeys Fox Point Seasoning is one of my most used spices. I started with bread crumbs, the seasoning and before I knew it, I had something really good.”
We couldn’t agree more. You can serve the chicken in larger pieces as a quick and easy dinner during the busy holidays…or tuck tiny pieces into bite-sized bread for a special appetizer at a festive gathering. Either way, you are sure to please everyone on your holiday list!
Chicken tenders are a treat for most kids, and they also make nice appetizers for a holiday party.
Preheat oven to 350°. Mix the mayonnaise with enough milk to thin it so it will coat the chicken. Some mayo is thicker than others; start with 2 TB. of milk and add more as needed. Combine the bread crumbs and FOX POINT or MURAL of FLAVOR SEASONING in a wide, shallow bowl. Dredge the chicken strips in the mayo, shake off the excess, and roll in the bread crumb mixture. Place in a single layer in an ungreased 9x13 glass baking dish. It’s okay to use 2 pans if needed. Sprinkle lightly with the Parmesan cheese. Drizzle the melted butter over all the chicken. Bake at 350° for 30 minutes or until browned and done. Check after 20 minutes to see how they’re coming along. Serve as is or cut into bite-size pieces and serve on crusty bread as mini-sandwiches.
