Allan explains, "ANZAC stands for Australian New Zealand Army Corps, the famous soldiers who fought for the British Empire in both World Wars. My godkids love these!" Apparently the wives of soldiers used to mail these to their husbands because they held up well and didn't spoil too quickly.


  • 1 stick butter (1/2 Cup)
  • 1 TB. molasses
  • 1 tsp. baking soda
  • 3/4 Cup sugar
  • 2 TB. water* (see note)
  • 3/4 Cup flaked coconut
  • 1 Cup oatmeal, regular or quick cooking
  • 3/4 Cup flour
  • 1 tsp. CINNAMON
  • 1 tsp. PURE VANILLA EXTRACT
       

Preheat oven to 275°. In a saucepan, combine the butter, molasses, baking soda sugar and water. Mix in the boiling water. Bring to a boil, stirring regularly, and then remove from heat. Add the coconut, oatmeal, flour, CINNAMON and VANILLA. Mix well. Drop by large tablespoonfuls onto a baking sheet. Bake at 275° for 25 minutes. They spread out so don't place them too close to each other!

Note: The original recipe, which is quite old, called for the 2 TB. of water to be boiling when added to the saucepan. We tried it both boiling and straight from the tap and did not notice a difference in the cookies, which were uniformly delicious!
