Artichoke Chicken or Turkey Melts

This quick recipe from Diane makes for a great appetizer or light lunch. Diane's story can be found on page 22.


  • 3 Cups cooked chicken or turkey, chopped
  • 1/2 Cup mayonnaise (light will work)
  • 1 7-oz. jar marinated artichoke hearts, drained and chopped
  • 1/4-1/2 tsp. DILL WEED
  • 1 TB. BRADY STREEET CHEESE SPRINKLE
  • 1/4 Cup shredded Asiago or Parmesan cheese
  • 1/4 Cup shredded cheddar cheese
  • 12 slices Italian bread or 30 slices French bread
  • 1/4 Cup olive oil
  • 1/4-1/2 tsp. GRANULATED GARLIC
       

Preheat oven to 350. In a bowl, combine the chicken or turkey, mayonnaise, artichokes, DILL WEED, BRADY STREET and shredded cheeses. Mix well. Brush the bread with olive oil and sprinkle with GRANULATED GARLIC. Spoon the mix evenly over the bread and bake at 350 for 15 minutes or until the cheese is nice and melty.
