Here is another great grilling recipe from Lloyd whose story appears in our Early Summer 2009 catalog. Fresh pepper is the secret to great steak.

  • 2 steaks, 3/4-1 inch thick
  • 2 bacon strips (hickory smoked or alder wood smoked)

Let the steaks sit at room temperature for 20 minutes. Rub both sides of the steaks with PENZEYS FRESHLY GROUND PEPPER. Wrap a strip of bacon around each steak, securing with a short metal skewer or a toothpick. If desired, microwave the bacon for two minutes first to remove some of the fat. Spray the grill rack with non-stick cooking spray that has a high heat tolerance before placing it over the coals. Grill over high heat (450°) for 5-8 minutes per side, depending on the thickness of the steak. Our steak shown in the photo cooked 7 minutes per side for medium rare.
