Preheat oven to 350°. In a mixing bowl, cream together the sugar and butter. Add the bananas, eggs and VANILLA and mix well. In a separate bowl, sift together the flour, salt, baking soda and CINNAMON or BAKING SPICE. Gradually add the dry ingredients to the wet and mix well. Fold in the chocolate chips, if using. Pour the batter into a standard, lightly greased (81/2x41/2-inch) loaf pan. Sprinkle the top with CINNAMON SUGAR. Bake at 350° for about 45 minutes. The top should spring back when lightly touched.
