“Enlightened” Roasted Pork Loin

According to Donna, "This is a super easy recipe to make and, of course, can be modified in many ways. Great for a busy night and even better if you have marinated it the night before! Just pop it into the oven, roast some veggies alongside, and fix a salad while it cooks." Donna's story can be found on page 16.

  • 1 2-lb. boneless pork loin
  • 4 TB. balsamic vinegar
  • 1/3 Cup extra virgin olive oil

Rinse the pork loin and pat dry. Combine the MURAL OF FLAVOR, balsamic vinegar, 2 TB. of the RASPBERRY ENLIGHTENMENT and the olive oil. Pour half of the marinade over the pork loin, cover (or place in a zip-top bag) and refrigerate for 2 hours or longer. Refrigerate the rest of the marinade. Preheat oven to 350°. Place the pork in a 9X13 baking dish, discarding the marinade from the zip-top bag. Pour the reserved marinade over the pork. Bake, basting occasionally with the pan juices. Cook 60-80 minutes, depending on the size of the loin. Check with a meat thermometer to reach your desired doneness. Remove from the oven and let the pork rest for about 10 minutes. Slice, drizzle with the remaining RASPBERRY ENLIGHTENMENT and serve.
