Preheat oven to 350°. In a medium bowl, sift together the flour, baking soda, baking power, CINNAMON and salt. Set aside. In a large bowl, cream together the butter and sugar until fluffy. Mix in the honey and VANILLA. Beat until fluffy. Add the eggs, one at a time, and beat until fully incorporated. Mix in the coconut, Craisins, chocolate chips and oats. Fold in the flour mixture and mix well. Form into 1-inch balls and place on ungreased cookie sheets. Bake at 350° for 13-15 minutes or until lightly browned.
