Everything Oatmeal Cookies

While oatmeal cookies are delicious, make them extra-special by trying this recipe from Kathy.


  • 2 Cups flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. PENZEYS CINNAMON
  • 1/2 tsp. salt
  • 1 Cup butter, softened (2 sticks)
  • 11/2 Cups brown sugar, packed
  • 1 TB. honey
  • 1 tsp. PURE VANILLA EXTRACT
  • 2 eggs
  • 1/2 Cup flaked coconut
  • 3/4 Cup Craisins (dried, sweetened cranberries)
  • 1/2 Cup white chocolate chips (regular would be good as well)
  • 2 Cups oats (regular or quick-cooking)
       

Preheat oven to 350°. In a medium bowl, sift together the flour, baking soda, baking power, CINNAMON and salt. Set aside. In a large bowl, cream together the butter and sugar until fluffy. Mix in the honey and VANILLA. Beat until fluffy. Add the eggs, one at a time, and beat until fully incorporated. Mix in the coconut, Craisins, chocolate chips and oats. Fold in the flour mixture and mix well. Form into 1-inch balls and place on ungreased cookie sheets. Bake at 350° for 13-15 minutes or until lightly browned.

Baking time: 13-15 minutes per batch
Yield: 41/2 dozen
