According to Carmen Romano, "My husband says this is the only way he'll eat salmon and we like how quick and easy the recipe is for a mid-week dinner." To read Carmen's romantic Valentine's Day story, turn to page 60.

  • 2 fillets of salmon (6-8 oz. each)
  • 1 tsp. FOX POINT SEASONING
  • 1 TB. butter
  • 1/2 lemon

Preheat oven to 375°. Lightly grease a baking sheet. Place the fillets on the sheet, skin side down. Sprinkle with FOX POINT SEASONING. Cut the butter into small pieces and place over the fish. Then squeeze the juice from the lemon over the fillets and to be fancy, you can slice the lemon and place over the fish. Cover with aluminum foil and bake at 375° for about 8-10 minutes (until the internal temperature of the fish reaches 145°). Serve with grilled mushrooms and simply sautéed Swiss chard.
