Not only does Greek Seasoning make a wonderful, springy salad dressing, it is also a nice marinade, especially for chicken and fish. Becky shares her favorite Greek Seasoning recipe here. Check out our catalog for more of her story.


  • 1 fryer chicken, split in half, or quartered if desired
  • 1/4 Cup lemon juice (juice of 1 large lemon or 2 small)
  • 2 TB. olive oil
  • 1/4 tsp. PENZEYS FRESHLY GROUND PEPPER
  • 2 tsp. GREEK SEASONING
  • 1 tsp. OREGANO (MEXICAN or TURKISH)
       

In a small bowl, combine the lemon juice, olive oil, PENZEYS FRESHLY GROUND PEPPER and GREEK SEASONING. Rub the OREGANO between your hands over the bowl until it becomes a fine powder. Mix well. If you have an injector, inject some of the marinade deep into the chicken breast and thighs. Rub the remaining marinade over the skin. Marinate in the refrigerator for 2-4 hours.
Spray your grill with non-stick cooking spray to keep the skin from ripping. Over medium coals, place the chicken skin-side up. Turn every 15 minutes for about 1 hour or until the juices run clear.
Don't overcook or the meat will be dry.
