Preheat oven to 375°. In a large bowl, crumble the bread and mix with the milk. Add the meat, PARSLEY, cheese, salt, PEPPER and eggs and mix well. Using your hands is easiest. Shape into a loaf and put in an ungreased, 81/2x41/2-inch loaf pan or on a rimmed baking sheet if you like the sides browned as well. Bake at 375° for 30 minutes. Remove from the oven, brush with catsup, tomato sauce or crushed tomatoes and sprinkle with OREGANO and BRADY STREET or Parmesan cheese. Return to the oven and bake for 30-35 minutes longer if free-formed on a baking sheet or 50-60 minutes longer if in a loaf pan.
