Clean and core the tomatoes. Place in a stock pot with the onions, GARLIC, salt, PEPPER and BASIL and/or CILANTRO. Cook for at least 2 hours over low heat. Stir once in awhile and use the spoon to help mash up the tomatoes. When the sauce is nearly done, in a separate nonstick pan, sauté the greens over medium heat until softened—2 minutes for spinach, more for tougher greens. Stir into the tomato sauce, let simmer just a minute to combine the flavors, and serve over your favorite pasta.
