A hearty mealógrilled steak, robust greens, and spiced peppercorn dressing. If you donít have Creamy Peppercorn Dressing Base to make homemade dressing, feel free to substitute with 1 Cup of your favorite creamy salad dressing.


  • 1 lb. sirloin steak
  • 1 TB. NORTHWOODS SEASONING or your favorite steak seasoning
  • 1/4 tsp. CAYENNE PEPPER
  • 1 head romaine lettuce
  • 10 cherry tomatoes

Salad Dressing:

  • 1 TB. CREAMY PEPPERCORN SALAD DRESSING BASE
  • 1/2 tsp. GROUND ANCHO CHILI PEPPER
  • 1/4 tsp. GROUND CUMIN
  • 4 TB. water
  • 1/2 Cup sour cream
  • 1/2 Cup mayonnaise (we used light)
  • 2 TB. red wine vinegar
       

Wash steak, pat dry. Trim excess fat. Cover with Northwoods Seasoning and cayenne pepper. As the meat will be eaten in bite-sized pieces with salad greens, it should be quite spicy. Refrigerate the meat at least 30 minutes for best flavor. Start the coals; it should take them about 20 minutes to be ready. Use enough coals to maintain a fairly high heat during the cooking process. To prepare dressing, combine Creamy Peppercorn Salad Dressing Base, ground ancho and ground cumin in 4 TB water. Let stand 5 minutes. Add sour cream, mayonnaise and red wine vinegar, whisk vigorously. Pour the dressing into a bottle, cap it up and refrigerate. Wash lettuce well, dry, and slice or tear into bite-sized pieces. Itís okay to slice the lettuce with a knife if youíll be using it within a few hours, otherwise rip it up with your hands (cut lettuce turns brown after a certain amount of time). Chill the lettuce while the steak is grilling. To grill the steak, sear on both sides over hot coals, then spread the coals out a bit for medium heat, cover the grill, leaving the vents open, and cook the steak about 5 minutes per side for medium rare (for a 11/2Ē thick sirloin). Since the steak only takes 10 minutes, it is best to stay with it, so you can turn it and move it around if the coals are hotter or cooler in different parts of the grill. It takes no expertise to grill successfully, just a watchful eye. Remove the steak to a plate and let stand 5-10 minutes before carving, to allow the juices to settle back into the meat. The steak will continue to cook a bit as it rests, so donít worry if itís on the rare side. Toss the lettuce with enough dressing to coat, place over 2/3 of four dinner plates, toss on a few halved cherry tomatoes and croutons if desired. Slice the steak across the grain into bite-sized pieces; fan out over the bottom of the plates.
