Daryl MacKinnon shares, "A must have birthday treat when I was growing up (the recipe if from my mom) and now a favorite for me as an adult. So easy and I make them for co-workers and family for last minute events. Great for picnics."


  • 1 1/2 Cups sugar
  • 1/2 Cup peanut butter (crunchy or smooth)
  • 3 eggs
  • 1/2 Cup butter, softened (Daryl uses unsalted)
  • 1 tsp. PURE VANILLA EXTRACT
  • 1 Cup flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt (reduce to 1/4 tsp. if using salted butter
  • 6 oz. good semi-sweet chocolate bits
       

Preheat oven to 350°. In a large mixing bowl, cream together the sugar, peanut butter, eggs, butter and VANILLA. In a separate bowl, mix together the flour, baking powder and salt. Add the dry ingredients to the wet ingredients and mix until smooth. Stir in the chocolate bits (and nuts if desired). Spread into an ungreased 9x13 pan, (Daryl uses metal. We tried metal and glass and they were both delicious!). Bake at 350° for about 35 minutes. They will be cracking and brown around the edges when done. Cool, cut and serve (best when served slightly warm still).
