Preheat oven to 375°. Cornish hens are a small but surprisingly meaty bird. Wash the hens, pat dry. Coat each hen with
vegetable oil, then season heavily with BICENTENNIAL RUB. Top with small pieces of butter. Place the hens in a roasting pan
with a rack in a preheated 375° oven for 15 minutes, then reduce heat to 325° and cook until the skin is crisply
golden and the meat is done, 45-60 minutes depending on size. Occasionally use a brush or spoon to baste the hens with the
pan juices.
