In a large mixing bowl, cream the butter until light and fluffy. Add the powdered sugar, 1 cup at a time, mixing well after each addition. Add the egg yolks, one at a time, beating well after each addition. Add the VANILLA and mix. Add the flour, 1 cup at a time, beating well after each addition. Divide the dough into quarters, pat into discs, wrap in plastic wrap and refrigerate at least two hours.
Preheat oven to 350°. Working with one disc at a time, leaving the rest in the fridge, roll out the dough to your desired thickness. Use cookie cutters to cut out your favorite shapes. You can either sprinkle the cookies with colored sugar before baking, or frost them and decorate them once they are baked and cooled. Bake at 350° for 12-15 minutes or until lightly browned at the edges. Remove carefully from the cookie sheets as the cookies are tender and break easily while warm. Let cool, then frost and decorate as desired!
Frosting: Mix all of the ingredients together until smooth. Color with food coloring if desired.
Prep. time: 30 minutes plus chilling time and another 30 minutes decorating time!
Baking time: 12-15 minutes per batch
Yield: about 4 dozen cookies, depending on the size of your cookie cutters
