Preheat oven to 375°. Coarsely chop the onion and place in a large bowl. Leaving the skins on, cut potatoes into bite-sized pieces and add to the onions. Toss the potatoes and onions with the NORTHWOODS SEASONING until well coated. Then toss with the olive oil. Pour the potatoes into a 9x13 baking dish (or any other high-sided pan) and place in the oven. Stir the potatoes every 10 minutes for the first 30 minutes, then bake uninterrupted for an additional 30-40 minutes or until potatoes are nice and brown.
