Preheat oven to 325°. Grease and flour two 81/2x41/2-inch bread pans and set aside. In a large bowl, combine the flours, salt, baking soda, baking powder and CINNAMON. Mix well and set aside. In a separate bowl, beat together the egg whites, bananas, oil, applesauce, sugars and VANILLA. Gradually add the dry ingredients to the creamed mixture and beat well. Stir in the zucchini, chocolate chips and walnuts, if using. Pour the batter into the pans and bake at 325° for 50-60 minutes or until a toothpick inserted into the center of the bread comes out clean. Cool in the pan for 15 minutes, remove from the pans and cool completely on a rack.
