Sweet, tender, delicious. Buy the key ingredient, a perfect avocado, and you’ll have a heavenly salad for two. Tomatoes are not quite perfect until later in the season, so follow the tip to make a good tomato better. The salad, dressing, and cheese should be at room temperature when served for the tastiest, sweetest salad.


Salad:

  • 1 ripe avocado (buy up to a week ahead of time if the avocados at the grocers are hard, so there is time to ripen to perfection)
  • 1 head Bibb lettuce
  • 1 medium ripe tomato
  • 1-2 tsp. olive oil
  • 2 oz. chunk of Parmesan or Asiago cheese, sliced very thin (or 2 TB. shreds, but we prefer slices or chunks for this recipe
  • freshly ground BLACK PEPPER to taste (we used our new SPECIAL EXTRA BOLD PEPPERCORNS)

Dressing:

  • 2 TB. ITALIAN DRESSING BASE
  • 2 TB. water
  • 1/3 Cup fresh olive oil (your favorite variety)
  • 1/3 Cup balsamic vinegar (good, strong stuff)
       

Make the dressing by combining ITALIAN DRESSING BASE and water in a cruet or old dressing bottle. Let stand 5 minutes while working on the salad, then add olive oil and vinegar and shake to combine.
To prepare the salad, wash and dry the lettuce. Break into bite-sized pieces and layer over two salad plates. Peel the avocado and cut into thin slices. Fan half of the avocado over each plate. Top with tomato bits and cheese slices, then drizzle dressing over the salad, serving more on the side. Grind fresh SPECIAL EXTRA BOLD BLACK PEPPER on top and serve.

Yield: 2 good-sized salads.

Tomato Flavor Tips:
To make a good tomato better, do the following: plunge briefly (10 seconds) into boiling water, then run under cold water and slide the skin off. Cut in quarters and gently squeeze out the juice and seeds (this is a healthy and tasty drink for the cook). Cut the tomato into small squares, then place in a bowl and drizzle with 1-2 tsp. olive oil (enough to coat). Toss gently, set aside until the salad is done. Make the dressing by combining ITALIAN DRESSING BASE and water in a cruet or old dressing bottle. Let stand 5 minutes while working on the salad, then add olive oil and vinegar and shake to combine.
