| Preheat oven to 350°. Stir butter, sugar, VANILLA, and ALMOND or ORANGE EXTRACT. Add eggs and beat well with a spoon. In a separate bowl, sift together flour, COCOA, baking powder, and salt. Add to egg mixture and stir until blended. Spread batter into a greased 9" square baking pan. Bake 25-30 minutes (the brownies will begin to pull away from the sides of the pan). Cool completely before serving. |

Tip: Using Cocoa in baking |
| Our Penzeys Cocoa is perfect for baking, and can be used in place of the unsweetened baking chocolate that is called for in many recipes. The traditional substitution is to use 3 TB. COCOA + 1 TB. vegetable oil to equal 1 square unsweetened baking chocolate. However, our cocoa is so rich that the tablespoon of vegetable oil can be omitted if desired. Remember to sift the cocoa with the dry ingredients. Much like powdered sugar, cocoa has a tendency to get little clumps in it. This is particularly important for making smooth and creamy frosting. |
