This is a must in Mary’s household for the holidays. Betty the cat loves it, as she gets to lick the paper from the can of crab meat. There are fancy crab meats out there, but use the stuff you get in the store for about $3.50, and no one will be the wiser. You can play with the low and no fat cream cheese and mayo; we find that a low fat cream cheese with regular mayo tastes the best.

           1 TB. HORSERADISH DIP
           2 TB. water
           8 oz. cream cheese (regular or low fat) at room                    temp.
           1/3 Cup mayonnaise
           2 TB. prepared chili sauce (at most grocery stores
                   by the catsup), cocktail sauce works well
           1 4 oz. can crab meat, drained
                small squeeze of fresh lemon juice–optional

Mix HORSERADISH DIP with the water and let stand for five minutes. Mix the cream cheese and mayonnaise until well blended. Add the chili sauce and mix, scraping down the sides of the bowl with a spatula. Add the rehydrated HORSERADISH DIP and mix. Fold in the drained crab meat. The dip mixture has lemon in it but I just love a squeeze of fresh lemon juice. Place the dip in a bowl, cover with plastic wrap and refrigerate.
