An easy one dish family meal that will be eaten and enjoyed without a single complaint - and if you have more than one kid that’s saying a lot. They may even ask for a second helping of rice. |

In a 2 quart saucepan, combine rice, chicken stock, salt, butter, CAYENNE PEPPER, BAY LEAVES, oranges and 3 TB. of the juice. Stir lightly, bring to a boil, reduce heat, cover tightly, and simmer on low for 15 minutes. Preheat oven to 350°. Remove rice from the stove, stir to blend flavors and break up the oranges, which will pretty much shred themselves while the rice cooks. Spray an 11 x 7" baking dish with vegetable oil spray, then spread the rice evenly in the baking dish. Sprinkle the pork chops on both sides with GALENA STREET, about 1 tsp. per chop. Place the pork chops on top of the rice. Bake at 350° for 35 minutes. Serve with fruit salad or broccoli on the side. Serves: 4 Prep. time: 5 minutes. Cooking time: 1 hour |
