This cookie is a reminder of childhood. Do you bite into the whole thing or break it into two and lick off the jam? Oh the decisions. Vary the window shape you cut out according to the season–for Christmas a holly leaf or star, for Valentine's Day, a heart.


  • ½ Cup (1 stick) butter, room temperature
  • ½ Cup granulated sugar
  • 1 ½ Cups flour
  • 4 TB. milk
  • 1 tsp. PURE VANILLA EXTRACT
  • 2 TB. jam–strawberry or apricot (or any flavor you have)
  • 2 TB. CINNAMON SUGAR or VANILLA SUGAR for sprinkling
       

Cream the butter and sugar, then add the flour, milk and VANILLA EXTRACT, mix to make a soft, but not too sticky, dough. Refrigerate the dough for 30 minutes. Preheat oven to 375°. Roll out the cooled dough to approximately ¼ inch thick and cut out rounds and place on a greased baking pan. Spread a little of the jam onto the base and then place another round with your chosen shape cut out on top. Try not to re-roll the dough too often as it will become hard. Sprinkle generously with flavored sugar and bake at 375° for 10-12 minutes until just golden brown.

Prep. time: 10 minutes plus chilling time
Baking time: 15 minutes
Yield: about 32 "sandwiches"
