| A wonderful appetizer, great served with fruity summer drinks. Everything can be made in advance and assembled, then popped in the oven or microwave. Even better, leftover picnic food can be utilized to create a late night snack after a hard day of summer fun. |

Mix pork and 1 TB. PIZZA SEASONING, cook over medium-high heat until crispy brown, drain on toweling. You can also chop up the leftover sausages of your choice. Chop onion, tomato and jalapeño, toss with oil and vinegar and TURKISH OREGANO, let stand at least 10 minutes for flavor to develop. Preheat oven to 375°. If it is really hot outside, the tortillas can be microwaved instead of turning on the oven, but they won't be crispy brown then. Just place each finished tortilla in the microwave for 1 minute on high, until the cheese in bubbly and melted. To prepare, lay four tortillas out on a baking sheet (2 per sheet), sprinkle evenly withcooked sausage, then add salsa mix, top with shredded cheese, and sprinkle on PIZZA SEASONING. Don't pile up too much cheese in the center or it won't melt properly. Top with another tortilla shell. Bake in preheated oven for 5-8 minutes, until the tortillas start to brown. Remove from the pans and slice while hot. Cut the tortillas into pizza shaped wedges, serve and enjoy. Four tortillas will serve 4-6 people or 2 really hungry ones. Prep time: 10 minutes.
