Broccoli is so good for you, and it's one vegetable most people love. This easy recipe uses toasted sesame seeds, which are very versatile and can be sprinkled on almost anything, from stirfry to cookies.

  • 2 heads broccoli ( about 2 lbs)
  • 1 juice orange (about 1/3 cup orange juice)
  • 1 tsp. butter
  • 2 TB. toasted SESAME SEED

Preheat oven to 350. Pour SESAME SEEDS on a nonstick baking sheet (1 Cup of sesame is a good amount). Bake for about 10 minutes until golden, stirring frequently. Remove from the oven, let cool. Store the extra in a jar in the fridge.

To cook the broccoli, bring two quarts of water to a rolling boil over medium high heat. While the water is heating, use a sharp knife to remove the florets from the broccoli stems. Leave on a bit of stem, since the upper stem of broccoli is tender and tasty. Save the lower stems and use them for Curry Broccoli Soup - page xx. Place the broccoli in the boiling water, cook exactly 2 minutes, drain and rinse briefly with cool water. The object is to stop the broccoli from cooking any further without making it stone cold. Start the sauce just before cooking the broccoli, Melt the butter in a small saucepan, add the juice of the orange, raise the heat to medium and reduce the liquid by half while the broccoli is cooking. Add the sesame seeds to the sauce just before drizzling it over the broccoli. Serve while warm.

Serves: 4-6.

Prep. time: 8 minutes.

Cooking Time: under 5 minutes, plus 10 minutes to toast the SESAME SEED.
