The time for fresh garden tomatoes is short, but sweet, so use them while you can. This simply dressed salad showcases the incomparable harvest flavor of nice, ripe tomatoes. There is no cooking involved, so this is perfect for those really hot days.

  • 5 small tomatoes
  • 1 cucumber
  • 1 small red onion


  • 1 TB. water
  • 1/4 Cup olive oil
  • 1/2 Cup red wine vinegar

Mix TUSCAN SUNSET with water and let stand for 5 minutes. Wash the tomatoes and remove the stems. Cut into wedges. Wash the cucumber, cut off the ends and scrape with the tines of a fork lengthwise–this will give you a pretty petal effect. If you don't want as much peel, you can peel the cucumber completely or peel off random strips. Depending on the diameter of the cucumber, you can either slice it into 1/4" rounds or cut the cucumber in half and then slice it into 1/4" thick pieces. Peel the onion and slice it into rings, then cut the rings in half. Whisk oil and vinegar into the TUSCAN SUNSET and water until well blended. Put all of the vegetables into a bowl and toss with the dressing. The longer you let it marinate, the better it will taste.
