A refreshing light and summery lunch when you are eating too many rich meals and holiday cookies. Try a few nuts with a banana on the side instead of more cookies - the flavors go great together.

  • 2 Cups cooked turkey, diced
  • 1/2 Cup low fat cream cheese
  • 1/2 Cup of your favorite salsa (we like fresh flavored chunky ones)
  • 1 small onion, minced (optional)
  • 1 TB. fresh Cilantro, chopped (omit if you donít have any around)
  • 1/4 - 1/2 tsp. ground CUMIN
  • 1/4 tsp. salt

Use a beater or whisk to cream the cheese with the onion, salsa and spices. We also like to add a dash of tabasco, as we start with mild salsa and spice it up to our individual tastes. Add the chopped turkey, stir well, and store in the fridge. Serve on soft flour tortillas with lettuce.

Makes - 6-8 rollups.
