Delicious and succulently tender, Jerk Pork Seasoning combines fabulously with the flavor of Raspberry Enlightenment, making this a meal not to be missed.
Preheat oven to 325°. Wash the pork, pat dry. Cut it in two pieces if it won’t fit in the pan otherwise. Rub all sides with JERK PORK SEASONING. In a large skillet or fry pan, heat the oil over medium heat. Sear the pork on all sides until it is nice and red-brown, which is about 2 minutes per side. Don’t have the heat so high the bits in the pan start to blacken, as you’ll be using the same pan to cook the mushrooms. Once the pork is browned, place in a baking dish. Brush with 1 TB. RASPBERRY ENLIGHTENMENT and place in the preheated oven. The pork will need roughly 1/2 hour to finish cooking, but if the piece is thick it might need longer. If in doubt, use a meat thermometer–inserted in the middle, 145° will be juicily done with just a hint of pink.
While the pork is roasting, cook the beans and mushrooms. Wash mushrooms, pat dry (or just rub off the stuff, whichever you prefer). Quarter the mushrooms. Toss into the pan the pork cooked in once the pork has been removed. Use your judgement as to adding more oil. If there is at least a teaspoon in the pan, you don’t need any more, if not, add a bit. Cook the mushrooms over medium heat, tossing every minute or so, until golden brown. Reduce the heat to very low, coat with 2 tsp. RASPBERRY ENLIGHTENMENT - just a guideline - use more if you love the flavor. Let the mushrooms simmer gently until service time. For the beans, heat 4 cups water to a rapid boil. Wash the beans and cut off the ends if they look dry. Boil 3 minutes, rinse briefly just to stop cooking. Toss with 1 tsp. RASPBERRY ENLIGHTENMENT, serve or keep warm until ready to serve. Remove pork from the oven when done, let rest 5 minutes before cutting. Serve slices fanned out over a mess of mushrooms, with a nice stack of green beans.Prep. time: 20 minutes
