German Pfefferkuchen Cookies This is my mother-in-law’s recipe for pfefferkuchen cookies. She fled her homeland of German-occupied Poland at the end of WWII narrowly escaping the Russian soldiers and came with her family to America on the Queen Mary. These cookies are made en masse by her and whoever is free to help (often the granddaughters) and are distributed to the family. Cookie cutters are used to create festive holiday cutouts adorned with a simple white glaze. 5 Cups flour 3 tsp. PENZEYS CINNAMON 1 tsp. GROUND CARDAMOM 1-2 tsp. GROUND NUTMEG 1 tsp. GROUND CLOVES 1 tsp. baking soda 2 TB. brandy or rum 3 sticks (1 1/2 Cups) butter 1/2 Cup honey 1/4 Cup maple syrup 1/4 Cup water 1 Cup dark brown sugar, packed 3 TB. sugar 3-4 eggs (we used 4) 2 TB. water 3 tsp. baking powder mixed with 2 TB. flour
