Grandmother’s Gluten-Free Banana Bread This recipe is a family favorite that Kim has adapted to be gluten-free. 1 Cup sugar 1/2 Cup butter 4 large or 5 medium very ripe bananas (black and gross-looking, if possible) 2 eggs, lightly beaten 1 tsp. PURE VANILLA EXTRACT, optional 1 tsp. baking soda dissolved in 1 TB. warm water 2 Cups gluten-free flour blend 1/2 tsp. PENZEYS CINNAMON, optional 1/2 Cup chopped nuts (Kim uses black walnuts)
