Homemade Chicken Noodle (or Rice) Soup Get cozy with this soup from John Teasdale of HappyBottoms. 1 5-6-lb. stewing hen 9 Cups water 2 ribs celery, cut into 3-inch pieces 1 large carrot, cut into 3-inch pieces 1 large leek, cut into 3-inch pieces 6 sprigs fresh parsley 1 WHOLE BAY LEAF 2 WHOLE CLOVES 1 large onion 1 TB. salt 8 WHOLE BLACK PEPPERCORNS 1 Cup diced carrots 1/2 Cup diced celery 1/2 Cup diced onion 1/3 Cup uncooked white rice or 2 Cups dry egg noodles (John uses frozen egg noodles) 1 10-oz. pkg. frozen peas (John likes English LaSeur peas) 1/2 tsp. salt 1/4 tsp. PENZEYS PEPPER 1-2 TB. CHICKEN SOUP BASE (recipe calls for 2) 1-2 TB chopped fresh parsley, optional (or 1/2-1 TB. PARSLEY FLAKES)
