Lentil Rogan Josh Elizabeth Armstrong writes, "I invented this one night when I was craving Rogan Josh but had no meat in the house. The lentils act meaty enough to satisfy my little meat-loving sons (twin boys, age 2), and the seasoning is spicy and tasty, but not hot. With the addition of some frozen green peas, this lentil dish can also stand in as a meat-like samosa filling. 1 Cup green or brown lentils 1 WHOLE BAY LEAF 4 Cups water 4 TB. PENZEYS MINCED WHITE ONION 1/2 tsp. PENZEYS MINCED GARLIC 1 Cup warm water 1/2-1 TB. fresh ginger, finely minced (1 tsp. GINGER POWDER) 1-2 TB. vegetable oil 1-2 TB.
