Mom's Woodland Cake Suze Littlefox reminisces, "My birthday arrived at the end of winter. We might have snow well into March around the Great Lakes where I'm originally from. But spring was right around the corner when two things happened: Daffodils began to peek through the snow and Mom made her Woodland Cake for my birthday. A heavy yellow cake, it was and always will be my hands down favorite!" 1 Cup shortening (butter works well) 1 tsp. salt 2 tsp. PURE VANILLA EXTRACT 2 Cups sugar 4 eggs 3 tsp. baking powder 3 Cups sifted cake flour (Suze's mom used regular flour) 1 Cup milk 1/4 Cup NATURAL COCOA POWDER 3 TB. water 2 TB. shortening or butter 2 TB. light corn syrup (Lyle's Golden Syrup works well here if you aren't fond of corn syrup) 2 Cups powdered sugar 1/4 tsp. PURE VANILLA EXTRACT
