He used to freeze them so he could have a taste of summer all year long. 4 Cups sliced fresh or thawed frozen peaches 1 Cup sugar 2-3 tsp. CAKE SPICE (or BAKING SPICE or PENZEYS CINNAMON) 2 TB. tapioca, flour or fruit pie thickener (you may also use ARROWROOT; start with 2 tsp.) 1 tsp. PURE VANILLA EXTRACT (optional) 1 TB. fresh lemon juice 3 TB. diced frozen butter Crust for 2 9-inch pies or 1 double crust pie: 1 1⁄2 sticks butter (3⁄4 cup) 1 1⁄2 Cups flour 1 tsp. sugar 1⁄2 tsp. salt 3-5 TB. milk
