Rogan Josh Rogan Josh is the popular red lamb dish from Northern India and Pakistan. This version comes from Rajasthan. Rogan Josh can be made with beef, but it is a perfect example of how rich seasonings can change the stronger flavor of lamb into something far more delicious. Rogan Josh does not have to be hot, it is excellent without any Cayenne Pepper at all. Rogan Josh is traditionally served with roti instead of rice. 3 lbs. lamb shoulder blade chops, bones and fat removed, cut into 3/4” cubes 5 TB. vegetable oil 2 medium onions, finely minced 2-4 TB. ROGAN JOSH SEASONING 1/2-1 tsp. ground CARDAMOM 2-4 TB. water 1-2 tsp. CAYENNE PEPPER (optional)-without any with 2 tsp. CAYENNE it will be about as hot 1 tsp. salt 1 Cup water 1 Cup plain yogurt
