Sweet Potato Pie This recipe comes from Emma Nash, who lives in the Walnut Way neighborhood. 1 stick (1⁄2 Cup) butter, softened 2 Cups cooked and mashed sweet potatoes (2 medium potatoes) 2 Cups sugar 1 5-oz. can evaporated milk (you can also use 2⁄3 Cup whole milk) 1 tsp. PURE VANILLA EXTRACT 3 eggs, beaten 1/2 tsp. GROUND NUTMEG 1 1⁄2 tsp. PENZEYS CINNAMON 2 prepared pie shells or 1 deep dish pie crust, unbaked (see our favorite recipe below) Crust for 2 9-inch pies or 1 double crust pie: 1 1⁄2 sticks butter (3⁄4 cup) 1 1⁄2 Cups flour 1 tsp. sugar 1⁄2 tsp. salt 3-5 TB. milk
