Veg According to Anne Halligan, "Veg is a mash of mixed root vegetables, traditional to the west of Ireland. (I'm from County Mayo.) Don't be fooled by its humble name and origin. Veg is delicious, and can make vegetable lovers out of skeptics." 4-5 baking potatoes, peeled and left whole (cut in half if really big) 4-5 carrots, peeled and sliced into 1-inch thick slices 1 small rutabaga, peeled and cut into eighths 2-3 fairly thin parsnips, peeled and quartered (avoid thick woody parsnips) 1 sweet potato, peeled and halved, optional, for color, (we used one in our photo) 1/4 tsp. salt 2 TB. butter 1/2-1 Cup hot milk 1/4-1/2 tsp. PENZEYS PEPPER, to taste 1/4 tsp. GROUND NUTMEG (Anne prefers to freshly grate WHOLE NUTMEG)
