BLACK SESAME SEEDS 4 dashes CHINESE FIVE SPICE POWDER (1/2 tsp.) 1 pomelo, cut into sections (use red grapefruit if you don’t see pomelos) 3 1/2 oz. enoki or shitake mushrooms, trimmed 1 Cup shredded carrot (2 medium) 1 Cup shredded, unpeeled cucumber (1 small) 1 Cup shredded daikon radish (1 medium) 2 tangerines, cut into sections 2 TB. shredded pickled red ginger (found with the Asian food products) 1/4 Cup sesame crackers or wonton crackers 4 oz. sushi-grade raw salmon (the salad traditionally uses raw fish; if you can’t find sushi-grade, or just don’t prefer raw, it is fine to use 4 oz. regular salmon and cook before slicing) 1 pomelo, juiced 1 tsp. honey 3 tsp. rice vinegar 1/4 Cup sesame oil 4 red New Year envelopes to hold the spices
